A Prime Rib Dinner


5-1/2 - 6 pounds boneless Prime rib roast
1 tablespoon salt
1 tablespoon pepper
2 cups rock salt


Serves 6-8

Preheat oven to 450 degrees. Fill the bottom of a roasting pan with the rock salt.

Salt and pepper the roast. Place the roast, fat side up, on top of the rock salt. Cook in the preheated oven for 30 minutes at 450 degrees. Reduce heat to 325 degrees and cook for approximately 40 to 55 minutes, until the internal temperature of the roast reaches 125 degrees. As a precaution, after 40 minutes, take out the roast and check the internal temperature with a very accurate meat thermometer. If it needs more cooking put it back in. Once it has finished cooking, remove roast out of the oven and cover it with foil and let it rest for 20 minutes. Meanwhile internal temperature will rise to about 130 to 135 degrees which will make the roast medium rare, (my favorite). Cook it more according to your liking. Slice it and serve it.
